Easy Peasy Pizza Dip and More

I just came up with that name, but the recipe does not originate from me. I got it from Shelley, but I know she got it from someone else...I'm not sure who it comes from originally...Sonja? Heidi? Dawn? Carissa? I want to give credit where credit is due! This recipe is easy and fast, but not exactly cheap, and definitely IN NO WAY Big D friendly, which is why I am enjoying a bit right now as I type this (leftover) because that is one of the advantages of being on The Big M for the time being. And because I'm WEAK. But I did run today, soooo hopefully it will all balance out. At least that is what I'm telling myself!

Moving on...

Easy Peasy Pizza Dip

8 oz sour cream
8oz cream cheese
1/2 cup pizza sauce
pepperoni (optional...I did not add it)
2 cups mozzarella cheese

Mix sour cream and cream cheese, put in pie plate, then add pizza sauce (I used a little more than 1/2 cup), and pepperoni. Bake in oven at 350 for 10 minutes. After 10 minutes add mozzarella and bake for an additional 5 minutes until melted. Serve with crackers (I like wheat thins), chunks of bread, etc.

And while I am at it, I might as well share a couple of other easy recipes that I use during the holiday season for "dish to share" parties. None of these originated from me, so let that be known.

Cranberry Meatballs
(Easy, but not incredibly fast or cheap)

Meatballs (frozen if you want this to be easy!)
1 can jellied cranberry sauce
1 cup ketchup
2 Tbsp. of brown sugar
1 Tbsp. of Lemon Juice

Combine all ingredients in saucepan (I use the crockpot), add meatballs, and heat thoroughly.

Easy Fantasy Fudge (from my friend Sarah)
(Easy, Fastish, and fairly cheap)

3/4 cups of butter
3 cups of sugar
2/3 cup evaporated milk (5 oz)
1 pkg (12 oz) semi-sweet chocolate chips
1 jar marshmallow creme (7 oz)
1 cup chopped nuts (optional)
1 tsp vanilla

Lightly grease 13x9 pan. Mix butter, sugar, and milk in heavy 2 1/2-3 qt sauce pan. Bring to a full rolling boil on medium heat, stirring constantly. Continue boiling 5 minutes on medium heat, stirring constantly to prevent scorching. Remove from heat. Gradually stir in chips until melted. Add remaining ingredients mixing well. Pour into prepared pan. Cool at room temperature and cut into squares. Yield 3 lbs.

Pretzel Treats
(Easy, fast, and cheapish)

Square or twist pretzels
One bag of Rolo's
M&M's

Preheat oven to 250°. Lay out pretzels on baking sheet. Top each with a piece of candy. Bake for 4 minutes. Remove from oven and top with one M&M (push it down a bit). Let cool.

Fudge (easy and cheap)
1 can eagle brand milk
12 oz pkg chocolate chips

Melt in saucepan (do not boil) and pour into 8x8 dish


Cream Cheese Dip

2 8 oz Cream Cheese (softened)
4 green onions
5 cloves fresh garlic (pressed)

Soften Cream Cheese in microwave for 30 seconds. Add garlic and onions. Mix well and garnish with green onions. Serve with Club Crackers.

Hooters Wing Sauce Dip
(dont let the name throw you - this sauce is in your local wal-mart with all the other bbq sauces - people will ask for this recipe!)

Jar of Hooters Hot wing Sauce (I use medium - hot is really hot)
approx 1 lb of chicken breasts, boiled
1 packet of dry Ranch
3 blocks of cream cheese

After separating chicken into small pieces, combine all ingredients. You may not want to add the entire jar of sauce. Place in casserole dish. Heat on 350 for 25-30 minutes or until warm. You may need to stir dip when you remove from oven. Serve with tortilla chips.

It is yummy! I got the recipe from a cookbook my mom's church put out years ago. But it's a lot like someone elses from around here...can't remember who. Maybe Sonja? Anyway, I'm doing the big M for now too! Oh, and guess what? I totally won again. :)

I have had the pizza dip recipe. When I make it I sprinkle Italian seasoning on the cream cheese layer. Funny thing, I just had the pretzel treats today at a cookie swap---think I will go get one!Yum!

I've done a couple of these.Love the pizza dip!
The pretzels...I use a hershey kiss and an m&m. (right now they have mint kisses, which are good.) But, I like the rolo idea. That sounds yummy! Thanks!

I can do that eeeeezy peeeezy pizzzza stuff and will so do it.
But what I loved is "Be brave. Be strong. Don't give up. Expect God to get here soon." I love your heart that expects your God any moment. He will show up for you this Christmas. I know. And I have some faith left over for you---I read this verse from Paul in Acts and he said that if we had faith, we could have it for others. I so have faith for you and faith in the God in you! This recipe is for English toffee which is family recipe we've been making as Christmas gifts for years. It's pretty simple, but not so simple at the same time.

It's only four ingredients:
1 pound of butter
2 cups of sugar
2 1-pound bars of Hershey's chocolate
2 cups chopped almonds

1. Melt butter over med-high heat in a med/large saucepan.
2. Add sugar and continue stirring semi-rapidly until the mixture turns a golden brown (note: This is the trickiest part. It takes awhile -- around 10-12 minutes or more. I use a mitten potholder cuz it gets a bit hot on the hand, and we've always eyeballed it, never used a candy thermometer). The candy at the very bottom of the pan will look like it's almost starting to burn (turning a dark-brown color); that's when you know you have the right color.
3. Quickly pour out the candy onto a large baking pan and tip the pan so that the candy spreads out across it evenly (use potholders).
4. When it's fully cooled, melt the chocolate in the microwave (usually on lower level, like Power 3 for 3 minutes, a couple times) and then spread the liquified chocolate across the candy.
5. Immediately add the chopped almonds on top of the chocolate before it solidifies and press down on the almonds with the flat of your hand so that they stay in the chocolate.
6. When everything hardens (couple hours), cut it up with a knife, serve, and enjoy. Yummy! :)
