"I'm strong to the finish 'cause I eats my spinach!"

I put this salad together today, I kind of drew from different sources to create it. I really love the combination of flavors. Enjoy! I'll call it...

"Alana is Eating Spinach!" Salad
(aptly named because eating spinach is a new thing for me)

Baby Spinach Leaves


Sliced Strawberries


Toasted Almonds


Sliced Cucumbers (I prefer peeled)


Brianna's Blushed Wine Vinaigrette Dressing


This dressing is sooooooo delicious!!

Well, that is basically it, I hope you enjoy it. Of course, you could add some diced chicken to it and that would make a wonderful and healthy lunch or meal!

I loved all your recipes for vegetables in the my last post, how about sharing some of your favorite salad recipes with me as well? Especially ones that include spinach as I am trying to fit more of this into my diet!

spinach is full of fiber. so good for you.

we eat lots of salad.

next you have to add a bit of shredded cabbage into your salad. :-)

i like a black bean salad.
lettuce, cabbage, cilantro, black beans, corn (i like these warmed), sliced olives, sliced red bell peppers, and tortilla chips (crushed and crumbled). top with salsa and thinned ranch dressing ( i thin mine with milk).

yummy!

i should give you my spaghetti sauce recipe. filled with veggies, but you'd NEVER know it. people who HATE veggies have eaten it and LOVED it.

Alana, this looks good. I'll have to try it! I'm not a big spinach fan, but I can be tricked into eating it.

On Friday night, my kids made dinner for the youth minister and his wife. (Matthew is 11 and makes calzones all by himself. I helped Abigail with her salad and Madeleine with her smoothies.) All the recipes were from the Disney recipe book we have, and Madeleine said, "I bet Mr. Matt & Miss Pam can't make recipes like this, because they don't have any children to help them!" Anyway, Abigail made a salad with iceberg lettuce, strawberries, blueberries, mandarin oranges, goldfish crackers, and a dressing made with 1/4 cup orange juice, 1 tblsp salad oil, 2 teaspoons honey mustard, 1 tsp sugar, and 1/4 tsp salt. You shake up the ingredients for the dressing, then pour them over the lettuce and toss it, then sprinkle on your fruit and the goldfish on top. This way the goldfish don't get too soggy from the dressing. It was a REALLY good salad - I think we'll have it again! :)

Yummy! That's actually a favorite, minus the cucumbers. I can only eat cucumbers in Greek salad. I'm not sure why! :)

yummy! i agree with linda minus the cucumbers. i bought everything to make this salad this weekend. i am not a hug salad fan but i have had that dressing and it is super yummy.

i have eaten denise's spaghetti sauce and so have my kids and you would never know all the veggies in it.

i am trying to do a better job of getting veggies in each day and a salad is a great way to do it. i need to make them more often.

Baby spinach
Apple slices
Feta
Toasted pine nuts

YUM! We don't eat a lot of salad here, but this one WE LOVE! Brianna has some SUPER yummy dressings. The one with the grapes on the front (don't know the name) is one of my favorites.

yummy! it reminds me of one of my faves at la madeleine...spinach/strawberries/walnuts & mushrooms. i love it with salmon and balsamic vinaigrette!

one way we like spinach is to saute it in olive oil w/minced garlic and a bit of salt. it wilts quickly so it takes a LOT of spinach to make enough servings!

of course if your kids are like mine, they won't eat it anyway!

I have a very similar recipe, and it is one of my favorite salads EVER! I think it's the spinach/strawberry combo that I love.
