Eat Your Veggies!

I have never been a fan of vegetables. Ask my Mom. As a kid, the extent of my vegetable repertoire was green beans, corn, and potatoes (provided you count those last two as actual vegetables). I have broadened my horizon a bit as an adult, but want to do better. It's just...well....they don't taste very good! This is where you come in. Will you share your favorite vegetables with me and how you prepare them? In turn, I will share my favorite vegetable recipe with you. This one is super healthy and soooooo good!

Crisp Green Beans with Lemon
(I made that title up...pretty catchy, huh?)

Fresh Green Beans
Lemon
Olive Oil
Salt

Snap the ends off the green beans (or buy the ones in the packaged that are already snapped....but only use fresh ones)! Boil the beans until they are crisp tender. Drain water, add fresh lemon juice (start with 1/2 a lemon and add more to taste), drizzle with olive oil, and sprinkle with salt. Adjust all ingredients to taste. Start with smaller amounts and add more as needed. These are simply delicious. Try them!

i didn't like veggies until i was 19. and now i think i could be a vegetarian.

i have said i was "allergic to fish" for the past 36 years. i didn't know if that was true, but i didn't want to find out :-)
however, last month i tried/ate salmon. twice. i am still alive.
don't tell anyone, but it was good.

Okay, girl, you are MISSING OUT. There are so many wonderful veggie recipes I could give you, but my favorite, by far, is to roast vegetables. Pick your veggies: any color sweet bell pepper (or combination of colors), red onion, garlic, zucchini and yellow squash. Those are my favorites. Put them in a shallow baking pan, drizzle with just a bit of really good olive oil, some sea salt or kosher salt (they're better than regular table salt) and pepper. Roast at 350 until they're tender. Usually 20-30 minutes. You can also do this on the BBQ grill. Just wrap the veggies, oil, and seasonings into a foil packet, and put on your grill to cook. Very yummy.

I made asparagus for the first time yesterday (olive oil and a little salt)...delish! and to my great surprise my boys LOVE asparagus. who knew!

One of my favorite summer salads is:

fresh asparagus, cooked (but still "crisp") then cooled
fresh diced tomatoes
blue cheese crumbles (you could substitute, I'm sure)
good balsamic vinaigrette (or Italian is good, too)

Yum!

I also like oven-baked sweet potato fries

Another favorite (which no one in my family shares) is yellow and green squash sliced, put in foil packets , drizzled w. olive oil, sprinkled w/ parmesan cheese, salt and pepper, and grilled

I'm not a big vegetable eater. Actually, I'll eat them, I'm just not fond of cooking them! I don't know why!

I really enjoy sautéing Zucchini. I slice it thin and sauté it lightly in olive oil. I season it with salt and pepper. When it's cooked, I sprinkle it with fresh chopped tomatoes and shredded parmesan cheese (freshly grated tastes better)!

you should try grilled asparagus and grilled zucchini! everything is yummy when it comes off the barbecue.

Yum--some great veggie suggestions!!!

Here's my super quick, kid-friendly veggie recipe:

PARMESEAN BROCCOLI
Steam broccoli (in microwave)
Serve onto plates
On each plate, squirt a couple of sprays of spray "butter"
Sprinkle some parmesean cheese on top

That's it! Yummy!
